This unique cut of Fullblood Wagyu, or American Wagyu is also known as a "Butchers cut" because it was an unattractive cut of meat.  What it lacks in looks it makes up for in its rich, beefy flavor much like a Ribeye or New York Steak and more affordable.  Sears best on high heat.  For most tender bite but against the long grain.
