A highly prized, and often difficult to find roast, Picanha is triangular in shape and is known for its thick fat cap, which renders out and bastes the meat as it cooks. Because it's cut from the top of the rump, a muscle that does little work, Picanha is exceptionally tender and juicy.

Best Beef I've Ever Bought

This cut of meat in combination with the fact that it comes from such amazing Fullblood Wagyu cattle, especially since Plum Creek is the best ranch I've purchased from, resulted in the most enjoyable dinner experiences I have ever had. I have eaten the best A5 Japanese Wagyu in the world and it simply doesn't compare to this because you cant eat an entire steak's worth without it being too rich. These picanha roasts give you the best of both worlds with the flavor/tenderness of the highest quality Wagyu along with being able to make a full meal out of it. I dry cure these roasts in the fridge for a day with SPG, give them a light smoke on the grill, then throw them under the broiler to crisp up the fat cap until an internal temp of 125 before a nice rest. Comes out perfect every time, but that's mostly a result of the beef itself. Genuinely an 11/10.
