Often referred to as "soup bones" and used for Osso Buco recipes, our 100% Fullblood Wagyu Shank Steaks are thick cut (about 1.5 inches) steaks that include the leg bone, with the marrow inside the bone.
Cut from the leg just above the knee or hock, beef shanks are a naturally tough cut, however when cooked slowly at a low temperature, the meat becomes extremely tender and flavorful.
